The Best Breakfast Casserole

3 slices of whole wheat bread, cubed (or if you're fancy like me and you make your own bread, use that! Here's my favorite go-to bread recipe. I make a loaf every 2-3 days for my family to enjoy!)
¼ cup butter, melted
10 oz shredded cheddar cheese (in my opinion, nothing beats Cabot Seriously Sharp Cheddar Cheese
12 eggs
1½ cups half & half (or milk of your choice)
1 tsp salt
2 tsp dry mustard
1 lb turkey sausage
2-3 big handfuls fresh organic baby spinach, chopped

Preheat oven to 350°. Cook the turkey sausage well in your favorite skillet, breaking it up as it cooks. Drain any remaining liquid. Melt the butter and mix well with the cubed bread, then add the cheese. Beat the eggs, half & half, salt and Black Pepper Vitality. Dissolve the dry mustard in 1 Tbs warm water and then add to the egg mixture. Now mix everything together and pour it into a 9x13 baking dish. Bake for about 50 minutes, and voila!

Real talk: Most commercial cleaning products are full of super nasty, get-that-away-from-me ingredients. We know—it’s a total bummer! No stress though; I'll walk you through why and how you can stop settling and start choosing home-cleaning superstars.

How toxic are my household cleaners?

At the risk of being the bearer of bad news, your run-of-the-mill cleaners are incredibly toxic.

According to the American Lung Association, the ingredients in most commercial solutions, sprays, and scrubs can:

  • Be air pollutants
  • Be harmful chemicals
  • Be flammable or corrosive
  • Irritate eyes and/or throat
  • Cause headaches
  • Contribute to health problems like chronic respiratory problems and allergies

Not only are these ingredients problematic, but they’re pretty far from your “let’s go green!” goals. Choosing cleaners with naturally derived ingredients is a win for you and a win for Mother Earth.

Cinnamon French Toast Casserole
This French Toast Casserole recipe is always SUCH a huge hit! My kids get so excited when I make this! It's super easy, and can be assembled a day ahead of time, so you can just pop it into the oven in the morning. 

French Toast Casserole
  • 1 loaf whole wheat bread, cubed (or if you're fancy like me and you make your own bread, use that! Here's my favorite go-to bread recipe. I make a loaf every 2-3 days for sandwiches, etc! I save the heels in the freezer for recipes like this!)
  • 10 eggs
  • 2 ½ cups milk
  • ½ cup pure maple syrup
  • ¼ cup butter, melted
  • 2 tsp ground cinnamon, or 2-3 drops Cinnamon Bark Vitality
Preheat oven to 350°. Arrange bread cubes in a 9x13 baking dish. Mix all other ingredients and pour over the bread. I like to mix it up a little with a spoon or spatula to make sure all of the bread is covered well! Pop that bad boy into the oven for 40-45 minutes. 

While it's baking, make the topping...

Topping:
Pour the topping over the casserole and bake for about 10 more minutes. Once you take it out of the oven, let it rest for 5-10 minutes before digging in.

Enjoy! We love to drizzle a little extra maple syrup on top right before eating.
