Homemade Mayo

I had no idea it was this SIMPLE and EASY to make homemade mayo! It's been on my list to try for years, and I finally did it recently. I won't go back to storebought after this! 1) it's cheaper than good, clean mayo ... and 2) it's legit the best tasting mayo I've ever had!

Homemade Avocado Oil Mayo
  • 1 egg
  • 1/2 - 3/4 cup pure avocado oil (I love this one: https://amzn.to/3STjl6q)
  • 1½ Tbs raw apple cider vinegar or lemon juice (my fam doesn't like lemon 😒 so I've been using the raw ACV instead)
  • 1 tsp dijon mustard
  • salt to taste - I do about 1/4 tsp

Add all of the ingredients into a mason jar. Use an immersion blender (like this one: https://amzn.to/49JzsKO) by putting it all the way to the bottom before turning on, then once you turn it on, pull it upward slowwwwly. It will all magically transform into mayo! It's pretty cool! Blend for a minute or 2 until it thickens up a bit. I keep this in the fridge and try to use it within a week or so. I haven't put it to the test to see how much longer it will last! 😆

Let's make some quick pickled onions!

1 red onion, thinly sliced
1/2 cup hot water
1/4 cup raw apple cider vinegar

Mix everything together in a mason jar and let it sit on the counter for about an hour. Store in the fridge and enjoy on so many things! Salads, burgers, tacos, whatever you want!

🍞 My fave bread recipes! 🥖
If you know me, you probably know my bread machine is one of my FAVORITE kitchen appliances! (Here’s the one I have: https://amzn.to/401LlXx)

I make homemade bread all the time, as well as other goodies! Here's a roundup of my most used + favorite recipes...

*I always add the vital wheat gluten because it seems to really make a difference with the rise!
*I used maple syrup in place of honey when my babies were under a year old, and we honestly couldn't taste the difference. 🥰

Pro Tip: I highly recommend weighing your ingredients (or at least the flour) when baking. I think it's so much easier, and it's for sure more accurate! The rule I follow is 5 oz = 1 cup of white flour and 4 oz = 1 cup of whole wheat flour.

My *current* favorite salad

OK, let's start with the dressing because it is so ridiculously EASY and SIMPLE!

Mix together equal parts:
That's it!! So easy and SO GOOD!! For one big single-serving salad, I like to use one tablespoon of each. Adjust as needed.

Next, let's talk about what's in the salad. You can do what you want, but I'm here to share my current favorite combo, haha!
  • arugula
  • shredded purple cabbage
  • sautéed shrimp (I like to sauté in either a little butter or avocado oil and freshly pressed garlic)
  • Einkorn Crunch - sprinkle as much as you want on top! I usually do about a half of a little package. If you don't have this, chopped almonds are great to use also!
Please let me know if you try this! I'm obsessed and wanted to share the love! 😆
