OK, let's start with the dressing because it is so ridiculously EASY and SIMPLE!
Mix together equal parts:
- mayo (I highly suggest looking for a healthier mayo like Primal Kitchen avocado mayo)
- Dijon mustard (I love Organicville!)
- pure maple syrup
That's it!! So easy and SO GOOD!! For one big single-serving salad, I like to use one tablespoon of each. Adjust as needed.
Next, let's talk about what's in the salad. You can do what you want, but I'm here to share my current favorite combo, haha!
- arugula
- shredded purple cabbage
- sautéed shrimp (I like to sauté in either a little butter or avocado oil and freshly pressed garlic)
- Einkorn Crunch - sprinkle as much as you want on top! I usually do about a half of a little package. If you don't have this, chopped almonds are great to use also!
